
- Grapes: Mainly Mencía and Alicante Bouschet. Small quantities of Merenzao, Sousón, Brancellao and others
- Wine-making: Grapes are handpicked and transported to the winery in 16 kg boxes. 30% of the grapes are feet crushed as it was traditional, the rest is destemmed. Fermentation takes place in 500 l oak barrels
- Ageing: The wine rests over a 16 month period in the same barrels in contact with its lees
- ABV: 13.5º
It is a single plot wine, whose vineyards were planted in 1918. It was a mixed variety plantation as it was common practice at that time
Our wine
It displays a very clean and pure dark garnet color.
On the nose it awakens with the subtlety of blue flowers and the elegance of dry red petals, over a balsamic bed of bay and mint leaves. It has a good volume of fruit with the freshness of ripe cherries and the smoothness of blueberry jam scented with essential oils.
There is a sudden burst of spices featuring black pepper. Its sparks are balanced with the creaminess of milk chocolate and evocative bakery scents. The forest and its smells take over with notes of dry leaves, lumber and turf. At times a metallic scent surfaces, immediately followed by white stones and the fragrance of alcohol.
A very lively and clean nose with an intense aromatic personality.
In the mouth it feels ample, round and voluptuous, with a firm body and noble tannins that leave behind an earthy and mineral feeling of slate.
The fruit is blue and purple, so fleshy you could almost chew it, with a firm acidity and a slightly bitter vegetal finish.
Useful information and pairing tips:
The aromatic notes of ageing and the use of stems in the winemaking process are impeccably balanced, as it is its strength and its roundness of touch. It is a dry wine with slight hints of a distant barrel, full-bodied and long. Very distinctive and elegant.
It will beautifully pair with roast or grilled vegatables, warm salads, pulses stews, meat casseroles, white and read meat, poultry and game, both small and big.
It is perfectly enjoyable right now but we are certain it will beautifully evolve in the following years.
