O Cabalín 2018: 2021 Decanter WWAwards Gold 95 Points

  • Grapes: Mainly Mencía and Alicante Bouschet. Small quantities of Merenzao, Sousón, Brancellao and others
  • Wine-making: Grapes are handpicked and transported to the winery in 16 kg boxes. 30% of the grapes are feet crushed as it was traditional, the rest is destemmed. Fermentation takes place in 500 l oak barrels
  • Ageing: The wine rests over a 16 month period in the same barrels in contact with its lees
  • ABV: 13.5º

It is a single plot wine, whose vineyards were planted in 1918. It was a mixed variety plantation as it was common practice at that time

Our wine

Very clean and shiny dark garnet color with a pinkish-violet rim.

High intensity on the nose, it firstly features crunchy red fruit and a deep flowery scent of violets. The swirling in the wine glass brings around the darkness of black currants and wild forest strokes of trees and shrubbery.

It becomes increasingly complex due to the emergence of minerality in the shape of slate and graphite, to which the tanginess of spices togheter and fine leather flavours are added.

This complexity leads us to believe it has a long way ahead without ever losing its flowery and fruity features, that always remain above the aromas provided by the ageing in oak barrels.

It has a powerful attack in the mouth yet it feels smooth. Full of flavor, it combines a balanced composition of crunchy red fruit with ripe vegetables and the piquancy of spices and smoke at the end of the palate.

Its beautiful acidity, good persistence, and ever present fruit, make it an extremely enjoyable wine.

Useful tips:

Its delicious fruitiness and elegant complexity allows for amazing pairing ideas: roast or braised vegetables, warm salads, blue fish, cuttlefish and shell fish as mussels or scallops.

It will enhance stews with pulses and last but not least, white and/or red meat with just a touch of grill.

It is perfectly enjoyable right now but we are certain it will beautifully evolve in the following years.
