- Ageing: It rests in the same barrels and in contact with its lees for a 12 month period
- ABV: 13º
The grapes come from hundred-year-old vineyards from different plots, where white and red varieties were randomly planted, on very steep hills of slate soils
Our view
It presents a beautiful golden yellow colour with greenish hues. The tint is more intense than in other wines of the same age owing to its maceration in contact with the skins before fermentation.
Sweet scents of aniseed compose a harmonic balance with the salinity of iodine and the delicacy of white petals, both fresh and dry. More intense aromas of apple and orange skin follow.
After a few swirls, aromas of yeast, wax and nuts, add complexity to the bouquet bringing memories of classic champagnes with its elegant oxidative notes.
The mouth features delicious acidity. It is wide, ample and full-bodied to the touch, with saline and spicy flavours. The oak has seamlessly blended in and it is only perceived in the wine complexity and length. The finish is slightly bitter with a touch of liquor, perfectly balanced with the freshness of its high acidity
Useful tips:
Overall the wine is fresh and well-balanced prompting you to pour another glass. Due to its complexity both in the nose and on the mouth, it has a nearly limitless pairing potential making it a perfect option with the most difficult dishes to match such as vinegar based specialties, and yet, it can confront opulent meat preparations such as roasts and game.
